Mexican Delicious Chicken Tinga Tacos Recipe

Chicken Tinga Tacos are spicy, tasty and full of sparks. The substantial chicken tinga is made in the Instant Pot, which makes it the ideal dinner for every week. These will become your new favourite tacos!


For the Tinga Chicken:

1 tablespoon olive oil

1 medium yellow onion, peeled and chopped

2 cloves Garlic, chopped

2 Chipotle Pepper in Adobos, Chopped

2 teaspoons with Adobo sauce

1/2 teaspoon dried oregano

1/2 teaspoon Ground cumin

1 can of 14.5 ounces of roasted tomatoes cut into cubes of fire

1/2 cup chicken chicken broth

1/2 teaspoon of Kosher salt

1/2 teaspoon of black pepper

2 lb Chicken thigh without boned skin

For the Tacos:

10 Corn tortillas (6 inches)

2 Ripe, peeled, stoned and sliced avocados

1/4 cup fresh Cilantro, chopped

1/2 cup Red onion, chopped

1/4 cup Fresh pomegranate seeds

Freshly Crumbled Queso

Lime wedges

Hot Sauce


Set Instant Pot to ready.
Add the oil and once the oil is hot, add the onion.
Cook until tender, stirring occasionally, for about 4 minutes.
Mix the garlic and cook until it is fragrant, about 30 seconds.
Stir in chipotles, oregano and cumin.
Cook for another minute.
Mix in tomatoes, chicken stock, salt and pepper.
Nestle chicken thighs into the mixture.
Close the lid of the instant pot.
Set to Manual Pressure on High to cook for 20 minutes.
Once finished, quickly release the pressure.
Remove the chicken on a chopping board and chop with two forks.
Using a stick blender, mix the sauce in the instant pot until a homogeneous mixture is obtained.
If you do not have an immersion blender, you can blend the sauce in batches in a blender.
Return the chicken to the sauce and stir together until they are combined.
To assemble the tacos, add the chicken tinga to each tortilla, dividing them evenly between them.
Cover with slices of avocado. Sprinkle with coriander, red onion, pomegranate seeds and fresh queso.
Serve immediately with spicy sauce and lime wedges.
