In our home, Mexican delicious chicken tinga tacos Recipe has come to become one of our favorite when it comes to preparing a foreign delicacy.
How can you not love tacos?
They can be made of almost anything that comes to mind: chicken, pork, beef, fish and vegetables. I absolutely love variety and that’s why tacos are one of my favorite foods.
I mean, all of you have seen my obsession over the years. From classic tacos to pastor slow cooker tacos to pastor to unique grilled shrimp tacos wrapped in bacon,
I’ll turn anything into a taco if I get the chance.
If you don’t know what chicken tinting is, it’s an abundant mixture of chicken with tomato sauce and chipotle. It’s fast enough to do, and with the help of the Instant Pot, even faster than usual.
You’ll end up wanting this meal over and over again, trust me.
The combination of juicy chicken, smoky chipotle, creamy avocado, and a pinch of lime literally jump off the plate. It’s just a symphony in every single bite.
A symphony of taco that you will never want to stop listening to all year round.
The best part, all this gathers in one pot and gathers in one pot FAST. If you have 30 minutes, you have enough time to prepare the entire meal and put it on the table.
Know that avocado is a MUST for these tacos because you need the creamy texture and rich flavor to counteract the spiceiness of the chicken.
I like to slice my avocado, but you can also crush it or even use leftover guacamole if you have some to hand.
The truth is that you should never skimp on the fillings, whether it’s avocado, red onion, coriander or fresh queso.
I always like to leave out all the seasonings for everyone so that they can build their own tacos with the seasonings they love.

Chicken Tinga Tacos are spicy, tasty and full of sparks. The substantial chicken tinga is made in the Instant Pot, which makes it the ideal dinner for every week. These will become your new favourite tacos!
For the Tinga Chicken:
1 tablespoon olive oil
1 medium yellow onion, peeled and chopped
2 cloves Garlic, chopped
2 Chipotle Pepper in Adobos, Chopped
2 teaspoons with Adobo sauce
1/2 teaspoon dried oregano
1/2 teaspoon Ground cumin
1 can of 14.5 ounces of roasted tomatoes cut into cubes of fire
1/2 cup chicken chicken broth
1/2 teaspoon of Kosher salt
1/2 teaspoon of black pepper
2 lb Chicken thigh without boned skin
For the Tacos:
10 Corn tortillas (6 inches)
2 Ripe, peeled, stoned and sliced avocados
1/4 cup fresh Cilantro, chopped
1/2 cup Red onion, chopped
1/4 cup Fresh pomegranate seeds
Freshly Crumbled Queso
Set Instant Pot to ready.
Add the oil and once the oil is hot, add the onion.
Cook until tender, stirring occasionally, for about 4 minutes.
Mix the garlic and cook until it is fragrant, about 30 seconds.
Stir in chipotles, oregano and cumin.
Cook for another minute.
Mix in tomatoes, chicken stock, salt and pepper.
Nestle chicken thighs into the mixture.
Close the lid of the instant pot.
Set to Manual Pressure on High to cook for 20 minutes.
Once finished, quickly release the pressure.
Remove the chicken on a chopping board and chop with two forks.
Using a stick blender, mix the sauce in the instant pot until a homogeneous mixture is obtained.
If you do not have an immersion blender, you can blend the sauce in batches in a blender.
Return the chicken to the sauce and stir together until they are combined.
To assemble the tacos, add the chicken tinga to each tortilla, dividing them evenly between them.
Cover with slices of avocado. Sprinkle with coriander, red onion, pomegranate seeds and fresh queso.
Serve immediately with spicy sauce and lime wedges.
