Whenever I want to prepare a perfectly fried and chicken, I take out my cast iron pan and make it do all the work. Once the chicken legs/tighs are seasoned, blanched over the stove and finished in the oven. There’s no easier way to cook chicken!
Why chicken thighs?
Chicken legs are a staple of our house. My family prefers dark meat over white meat, so I always keep several packs in our freezer. Whenever there’s a sale at my grocery store, I’m sure to stock up.
Because dark meat has more fat than white meat, chicken is juicier and has a lot of flavor.
While my favorite way is to cook chicken thighs in a cast iron pan, I also like to roast the chicken in the oven. Lemon Rosemary Chicken is another of my favorites that is often featured on our dining table.
Why cook in a cast iron pan?
A cast iron pan is a great tool to produce a really crisp skin. The chicken is scalded on the stove and the cast iron pan is a great tool to look for the chicken so that it has a large crust.
The crust keeps the moisture inside the chicken thighs creating the perfect juicy chicken.

Which side dishes go well with crispy cast iron chicken thighs?
These chicken legs are a fairly simple dish, so a variety of side dishes can be served with this dinner. If I’m counting calories, I could serve chicken with roasted lemon asparagus or a salad.
But if you want a hearty meal, mashed potatoes or macaroni and cheese work well.

Crispy cast iron thighs are crisp on the outside and juicy on the inside. Heat up your cast iron pan and get ready for dinner on the fast table!
1 teaspoon of coarse sea salt
1 teaspoon garlic powder
1 teaspoon of Italian condiment
1/2 teaspoon freshly ground black pepper
6 large chicken legs with leather bone, (about 2.5 pounds)
2 tablespoons of olive oil
Preheat the oven to 400°F.
Mix the salt together with italian seasoning, garlic powder and pepper in a small bowl.
Dry the chicken legs with a paper towel, then sprinkle with seasoning on both sides.
In a large cast iron pan, heat the olive oil over medium heat until it is hot.
Put the chicken thighs in the pan, with the skin facing down and look for 8-10 minutes or until the skin is beautiful and crispy.
Be careful with oil splashes and cover with a protection if desired.
Turn the chicken pieces upside down with the pliers.
Transfer the cast iron pan to the oven.
Roast for about 25 minutes or until the chicken is cooked and the internal temperature reaches 165°F when tested with a meat thermometer.
