If you know me very well, then you will know that barely a week pass by without me preparing Baked Honey Garlic Chicken and Vegetables for dinner.
Are you intimidated by handling multiple pots and pans in the kitchen at the same time?
I certainly do, Lol.
Cooking a square meal (you know, meat-starch – two vegetables) makes me sweat.
Maybe because I do everything with at least one child glued to my legs? Probably in part, but it’s definitely not the only reason.
I’ll forget to make starch. The meat is going to be high. And the two veg? Which probably turned into “taking this carrot and eating it raw” when the child started to get impatient.
Get to the rescue: Dinners in the pan sheet!
It was not even the internet that introduced me to these wonderful and precious meals.
No, it was my mother. Who made the most amazing salmon and vegetables on a single sheet of pan a couple of summers ago – and just like that, I was hooked.
It makes sense, doesn’t it? Why cook everything separately, when you can simply throw all things on a single pan.
You already have pretty much everything dropped upside down with my Greek lemon chicken dinner, which I shared here. I also have a dinner of chicken, potatoes and cutlets of Brussels sprouts from last winter.
And then there’s this Salmon Sheet Pan Dinner with crispy garlic butter, green beans + potatoes right here, which is with green beans and potatoes too. This is just a surprising combination. So I thought – must do this with the chicken, too.
And believe me, it’s even better with a garlic sauce with honey and lemon. That stuff is pure magic.
An easy week-night dinner, this sheet of baked garlic honey chicken and vegetable dinner will be loved by the whole family. So quick and easy to prepare, and clean up is a breeze. it is extra nutricious and perfect for ages, no health restrictions!
1/4 cup olive oil
2 tablespoons of honey
1 tablespoon mustard
2 cloves Garlic, chopped
1 teaspoon of dried oregano
zest of a lemon
For the chicken and vegetables:
4 Skinless chicken breasts, boned
4 medium-sized potatoes, cut into 1-inch pieces
1 pound Green beans, trimmed ends
Heat the oven to 400°F.
Mix all the ingredients of the sauce in a large bowl.
Pour half of the sauce into a shallow plate and cover the chicken well.
Put the chicken on one side of the pan and the potatoes on the other side.
Bake in the oven for 10 minutes.
Throw the beans with the remaining sauce.
Remove the baking sheet from the oven and mix the beans into the potatoes.
Finish cooking for 10-15 minutes, or until the chicken juice is clear.
